Description

Delightful pancake tacos filled with sweet fruits, creamy Nutella, and crispy bacon, offering a fun twist on traditional breakfast.


Ingredients

  • 2 cups All-purpose flour
  • 2 tbsp Sugar
  • 2 tsp Baking powder
  • 1 tsp Salt
  • 2 large Eggs
  • 1¾ cups Buttermilk
  • 4 tbsp Butter (melted)
  • 1 tsp Vanilla extract
  • Cooking spray (for greasing pan)
  • 1 cup Heavy whipping cream
  • 2 tbsp Powdered sugar
  • 1 tsp Vanilla extract (for cream)
  • 2 cups Strawberries (sliced)
  • 1 cup Blueberries
  • ½ cup Maple syrup
  • ¼ cup Chopped nuts (Pecans or walnuts)
  • 2 tbsp Nutella
  • 6 Bacon strips (cooked and crumbled)
  • 4 scrambled Eggs
  • 1 cup Shredded cheddar
  • 2 Breakfast sausages (cooked and crumbled)
  • ¼ cup Green onions (chopped)
  • 2 tbsp Cream cheese (softened)
  • Salt & pepper (to taste)

Instructions

  1. Whisk dry ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  2. Combine wet ingredients: In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
  3. Mix batter: Gently combine the wet and dry mixtures.
  4. Let rest: Allow the batter to rest for about 10 minutes.
  5. Heat skillet: Preheat your non-stick skillet over medium heat.
  6. Pour and cook pancakes: Use a ladle to pour approximately ¼ cup of batter into the skillet. Cook until bubbles form, about 2-3 minutes.
  7. Fold into tacos: Once cooked, gently fold each pancake in half.
  8. Prepare fillings: Whip cream with powdered sugar and vanilla, scramble eggs, crumble bacon and sausage, and prepare fruits.
  9. Assemble tacos: Spread cream cheese in each taco, followed by scrambled eggs, bacon, fruits, and drizzle of Nutella or maple syrup.
  10. Serve warm: Enjoy immediately.
