Description

Indulge in this rich and flavorful Pesto Grilled Cheese, featuring gooey melted cheese and aromatic pesto nestled between golden, crispy bread.


Ingredients

Scale
  • 2 slices of bread (artisan, sourdough, or white)
  • 2 slices of cheese (cheddar and mozzarella)
  • 2 tablespoons pesto
  • Butter for grilling

Instructions

  1. Spread 1 tablespoon of pesto on one side of each slice of bread.
  2. On the unpasted side of one slice, place a slice of cheese.
  3. Lay the second slice of bread on top, pesto side down.
  4. Add a small pat of butter to the skillet over medium heat and let it melt.
  5. Carefully place the sandwich in the skillet, cooking until golden brown for about 3-4 minutes per side.
  6. Slice the sandwich in half and serve warm.

Notes

For a twist, add sliced tomatoes, fresh spinach, or sautéed mushrooms. Make-ahead pesto can save time!
