- 2 slices of bread (artisan, sourdough, or white)
- 2 slices of cheese (cheddar and mozzarella)
- 2 tablespoons pesto
- Butter for grilling
Instructions
- Spread 1 tablespoon of pesto on one side of each slice of bread.
- On the unpasted side of one slice, place a slice of cheese.
- Lay the second slice of bread on top, pesto side down.
- Add a small pat of butter to the skillet over medium heat and let it melt.
- Carefully place the sandwich in the skillet, cooking until golden brown for about 3-4 minutes per side.
- Slice the sandwich in half and serve warm.
Notes
For a twist, add sliced tomatoes, fresh spinach, or sautéed mushrooms. Make-ahead pesto can save time!
