Description

A delightful twist on the classic grilled cheese sandwich, featuring creamy mozzarella and vibrant basil pesto for an unforgettable flavor experience.


Ingredients

  • 4 slices of bread (sourdough or artisan loaf)
  • 4 tablespoons basil pesto
  • 1 1/2 cups shredded mozzarella cheese (or 4 slices of fresh mozzarella)
  • 2 tablespoons unsalted butter
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Spread 1 tablespoon of pesto on one side of each slice of bread.
  2. Assemble the sandwiches with two pesto-covered slices down, topping with mozzarella and optional Parmesan, then cover with remaining slices, pesto side down.
  3. Butter the outside of each sandwich with softened butter.
  4. Heat a non-stick skillet over medium heat, grill sandwiches for 2-3 minutes on each side, pressing lightly.
  5. Once grilled, slice the sandwiches in half and serve warm.

Notes

For added flavor, customize with tomatoes or spinach; ensure the butter is softened for easy spreading.
