- 4 slices of bread (sourdough or artisan loaf)
- 4 tablespoons basil pesto
- 1 1/2 cups shredded mozzarella cheese (or 4 slices of fresh mozzarella)
- 2 tablespoons unsalted butter
- Optional: 1/4 cup grated Parmesan cheese
Instructions
- Spread 1 tablespoon of pesto on one side of each slice of bread.
- Assemble the sandwiches with two pesto-covered slices down, topping with mozzarella and optional Parmesan, then cover with remaining slices, pesto side down.
- Butter the outside of each sandwich with softened butter.
- Heat a non-stick skillet over medium heat, grill sandwiches for 2-3 minutes on each side, pressing lightly.
- Once grilled, slice the sandwiches in half and serve warm.
Notes
For added flavor, customize with tomatoes or spinach; ensure the butter is softened for easy spreading.
