Description

A delightful dish that combines rich, nutty pesto with comforting pasta and crispy, golden Parmesan chicken, perfect for any occasion.


Ingredients

  • 8 ounces pasta (penne or fettuccine)
  • 1 cup pesto sauce
  • 2 chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Instructions

  1. Boil a large pot of salted water over high heat. Add the pasta and cook according to the package instructions until it reaches al dente. Drain and set aside.
  2. Combine the breadcrumbs, grated Parmesan cheese, salt, and pepper in a bowl. Mix until evenly combined.
  3. Dip each chicken breast into the breadcrumb mixture, ensuring an even coat.
  4. Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown.
  5. Mix the drained pasta and pesto sauce in a large mixing bowl, adding reserved pasta water if needed.
  6. Plate the pesto pasta and top it with the crispy Parmesan chicken. Garnish with fresh basil if desired.

Notes

For a low-carb alternative, consider using zucchini noodles. Customize with sautéed vegetables if desired.
