- 1 cup chorizo, cooked and crumbled
- 1/2 cup cheese (queso fresco or cheddar)
- 1/4 cup onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Tortilla chips (for serving)
Instructions
- In a skillet over medium heat, warm a splash of oil and sauté the diced onion and minced garlic until the onion is translucent, about 3-4 minutes.
- Add the cooked chorizo to the skillet and mix well, cooking for an additional 2-3 minutes.
- Pour in the refried beans, cumin, and chili powder. Stir to combine and season with salt and pepper. Cook until heated through, about 5 minutes.
- Reduce heat to low, stir in the cheese, and allow it to melt, creating a creamy texture.
- Transfer the mixture to a serving bowl and serve with crispy tortilla chips.
Notes
Consider adding cayenne pepper or jalapeños for extra heat. Can be made ahead and reheated.
