Description

A hearty and delicious blend of smoky chorizo and creamy refried beans, perfect for gatherings and cozy dinners.


Ingredients

  • 2 cups refried beans
  • 1 cup chorizo, cooked and crumbled
  • 1/2 cup cheese (queso fresco or cheddar)
  • 1/4 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips (for serving)

Instructions

  1. In a skillet over medium heat, warm a splash of oil and sauté the diced onion and minced garlic until the onion is translucent, about 3-4 minutes.
  2. Add the cooked chorizo to the skillet and mix well, cooking for an additional 2-3 minutes.
  3. Pour in the refried beans, cumin, and chili powder. Stir to combine and season with salt and pepper. Cook until heated through, about 5 minutes.
  4. Reduce heat to low, stir in the cheese, and allow it to melt, creating a creamy texture.
  5. Transfer the mixture to a serving bowl and serve with crispy tortilla chips.

Notes

Consider adding cayenne pepper or jalapeños for extra heat. Can be made ahead and reheated.
