Description

A comforting Potato Tart filled with crispy bacon, sweet leeks, and creamy cheese, baked to golden perfection.


Ingredients

  • 4 starchy potatoes (Russets or Yukon Gold)
  • 2 leeks, sliced
  • 4 slices of bacon
  • 1 yellow onion, diced
  • 4 eggs
  • 1 cup Gruyère or sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • Butter or oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the potatoes into 1/8-inch slices.
  3. Arrange the sliced potatoes in a greased tart pan, overlapping to create a crust.
  4. Cook the bacon in a skillet over medium heat until crispy, then drain on paper towels.
  5. Add the diced onion and leeks to the same skillet and cook until softened, about 4-5 minutes.
  6. Whisk together eggs, cheese, salt, and pepper in a bowl until smooth.
  7. Stir the cooked bacon and sautéed veggies into the egg mixture.
  8. Pour the filling into the potato crust, spreading it evenly.
  9. Bake for 35-40 minutes or until filling is set and top is golden brown.
  10. Let cool slightly before slicing.

Notes

For a crispier texture, consider using an air fryer for this recipe. Make-ahead filling can be stored in the fridge until ready to bake.
