- 8 oz wide Lo Mein noodles
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook the Noodles: Begin by cooking the wide Lo Mein noodles according to the package instructions. Drain and rinse under cold water, then set aside.
- Brown the Pork: Heat the peanut oil in a large skillet over medium heat. Add the ground pork and half of the sliced green onions. Cook until browned, about 5-7 minutes.
- Prepare the Sauce: Whisk together chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha in a bowl.
- Combine Ingredients: Once the pork is cooked, pour the sauce over it in the skillet. Stir to combine and let simmer for 1-2 minutes.
- Add Noodles and Veggies: Toss in the cooked Lo Mein noodles and coleslaw mix. Cook for 2-3 minutes until the coleslaw begins to wilt.
- Garnish and Serve: Transfer to serving bowls and top with remaining green onions.
Notes
