Instructions
- Cook the Noodles: Boil water in a large pot, add Lo Mein noodles, cook according to package instructions, rinse under cold water, and set aside.
- Brown the Pork: Heat peanut oil in a large skillet over medium heat, add ground pork and sliced green onions, cook until browned (5-7 minutes).
- Prepare the Sauce: Whisk chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha in a separate bowl until well-combined.
- Combine Everything: Add cooked noodles and coleslaw mix to the skillet with pork, pour in sauce, and toss gently for 2-3 minutes until coated.
- Serve and Garnish: Spoon into bowls, sprinkle with remaining green onions, and enjoy the vibrant colors and aroma.
