Description

A comforting dish combining crispy potstickers and silky rice noodles with mixed vegetables in a savory sauce.


Ingredients

  • Silky rice noodles
  • Potstickers
  • Mixed vegetables (bell peppers, carrots, broccoli)
  • Soy sauce
  • Ginger
  • Garlic
  • Scallions
  • Sesame oil
  • Water

Instructions

  1. Cook the rice noodles according to package instructions until al dente, then set aside. Rinse with cold water.
  2. Heat sesame oil in a large skillet over medium heat. Place potstickers in the pan, frying until crispy and golden on both sides.
  3. Add mixed vegetables to the pan and sauté until tender, about 3-4 minutes.
  4. Toss in minced garlic and grated ginger, stirring for about a minute until fragrant.
  5. Pour in soy sauce, stirring to combine. Cook for another minute.
  6. Gently fold the cooked noodles into the skillet, mixing until coated.
  7. Serve hot, garnished with chopped scallions.
