Description

A delightful blend of breakfast staples reinvented into a beloved Italian dish, featuring layers of noodles, sausage, ricotta, spinach, and gooey mozzarella.


Ingredients

  • 9 Lasagna Noodles
  • 1 lb Breakfast Sausage
  • 1 cup Ricotta Cheese
  • 2 cups Shredded Mozzarella Cheese
  • 1 cup Grated Parmesan Cheese
  • 4 Large Eggs
  • 2 cups Spinach
  • 2 cups Marinara Sauce
  • Salt and Pepper to Taste
  • Fresh Basil for Garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and drain.
  3. Brown the breakfast sausage in a skillet over medium heat, then drain excess fat.
  4. Combine ricotta cheese, eggs, salt, and pepper in a mixing bowl and whisk until smooth.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, then add half of the sausage, ricotta mixture, spinach, and mozzarella.
  7. Repeat the layering process.
  8. Top with remaining mozzarella and Parmesan cheeses.
  9. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes.
  10. Let cool for a few minutes before garnishing with basil and serve.

Notes

Make-ahead option: Assemble the night before and refrigerate. Adjust bake time if cooking straight from the fridge.
