- 9 Lasagna Noodles
- 1 lb Breakfast Sausage
- 1 cup Ricotta Cheese
- 2 cups Shredded Mozzarella Cheese
- 1 cup Grated Parmesan Cheese
- 4 Large Eggs
- 2 cups Spinach
- 2 cups Marinara Sauce
- Salt and Pepper to Taste
- Fresh Basil for Garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions and drain.
- Brown the breakfast sausage in a skillet over medium heat, then drain excess fat.
- Combine ricotta cheese, eggs, salt, and pepper in a mixing bowl and whisk until smooth.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, then add half of the sausage, ricotta mixture, spinach, and mozzarella.
- Repeat the layering process.
- Top with remaining mozzarella and Parmesan cheeses.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes.
- Let cool for a few minutes before garnishing with basil and serve.
Notes
Make-ahead option: Assemble the night before and refrigerate. Adjust bake time if cooking straight from the fridge.
