- 2 avocados
- 1 mango
- 1 small red onion
- 1 handful cilantro
- 1 small jalapeño
- 2 limes
- 1 tsp chili powder
- 2 tbsp olive oil
- 1 tsp honey
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- In a bowl, combine shrimp with olive oil, chili powder, salt, and black pepper.
- Heat the skillet over medium-high heat and cook shrimp for 2-3 minutes on each side until pink.
- Chop mango, red onion, jalapeño, and cilantro, then toss with lime juice and salt.
- Whisk together lime juice, olive oil, honey, chili powder, salt, and pepper for the lime-chili sauce.
- Slice avocados into wedges or cubes and splash with lime juice.
- Assemble bowls starting with a base of rice or greens, then layer shrimp, avocado, and mango salsa.
- Drizzle lime-chili sauce over the top and garnish with cilantro.
Notes
Prepare mango salsa and sauce a few hours ahead for best flavor blending. Customize with grilled chicken or tofu instead of shrimp.
