Description

Delightfully fresh Shrimp and Avocado Bowls topped with vibrant Mango Salsa and zesty Lime-Chili Sauce, perfect for any occasion.


Ingredients

  • 12 oz shrimp
  • 2 avocados
  • 1 mango
  • 1 small red onion
  • 1 handful cilantro
  • 1 small jalapeño
  • 2 limes
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. In a bowl, combine shrimp with olive oil, chili powder, salt, and black pepper.
  2. Heat the skillet over medium-high heat and cook shrimp for 2-3 minutes on each side until pink.
  3. Chop mango, red onion, jalapeño, and cilantro, then toss with lime juice and salt.
  4. Whisk together lime juice, olive oil, honey, chili powder, salt, and pepper for the lime-chili sauce.
  5. Slice avocados into wedges or cubes and splash with lime juice.
  6. Assemble bowls starting with a base of rice or greens, then layer shrimp, avocado, and mango salsa.
  7. Drizzle lime-chili sauce over the top and garnish with cilantro.

Notes

Prepare mango salsa and sauce a few hours ahead for best flavor blending. Customize with grilled chicken or tofu instead of shrimp.
