- 1½ lbs ground beef (85/15)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 cup BBQ sauce
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 cups mashed potatoes
- 2 tbsp butter
- ¼ cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the ground beef, onion, garlic, breadcrumbs, BBQ sauce, smoked paprika, salt, and black pepper in a large bowl.
- Scoop the mixture into a greased muffin tin, filling each cup three-quarters full.
- Bake for 20-25 minutes, checking for an internal temperature of 160°F (70°C).
- Prepare the mashed potatoes by mixing cooked potatoes with butter and milk until silky smooth.
- Remove the meatloaf cupcakes from the oven and let them cool slightly for about 5 minutes.
- Use a piping bag to swirl the mashed potatoes over each cupcake.
- Drizzle additional BBQ sauce over the frosting if desired, then serve hot.
Notes
For a make-ahead option, prepare the meatloaf mixture a day in advance. You can also use an air fryer at 325°F (160°C) for about 15-20 minutes.
