Description

These whimsical meatloaf cupcakes are topped with creamy mashed potato frosting and drizzled with smoky bourbon BBQ sauce, creating a perfect blend of flavors and fun.


Ingredients

  • lbs ground beef (85/15)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 cup BBQ sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups mashed potatoes
  • 2 tbsp butter
  • ¼ cup milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the ground beef, onion, garlic, breadcrumbs, BBQ sauce, smoked paprika, salt, and black pepper in a large bowl.
  3. Scoop the mixture into a greased muffin tin, filling each cup three-quarters full.
  4. Bake for 20-25 minutes, checking for an internal temperature of 160°F (70°C).
  5. Prepare the mashed potatoes by mixing cooked potatoes with butter and milk until silky smooth.
  6. Remove the meatloaf cupcakes from the oven and let them cool slightly for about 5 minutes.
  7. Use a piping bag to swirl the mashed potatoes over each cupcake.
  8. Drizzle additional BBQ sauce over the frosting if desired, then serve hot.

Notes

For a make-ahead option, prepare the meatloaf mixture a day in advance. You can also use an air fryer at 325°F (160°C) for about 15-20 minutes.
