Delicious and gooey S’mores Cookie Bars that combine the flavors of chocolate, marshmallow, and graham cracker for a nostalgic treat.

- 1 cup Unsalted butter, softened
- 1 cup Brown sugar, packed
- 1/2 cup Granulated sugar
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 2 1/2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 cup Graham cracker crumbs
- 1 cup Chocolate chips
- 1 cup Mini marshmallows
- Extra chocolate chips and marshmallows for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Line an 8×8 inch baking pan with parchment paper.
- In a mixing bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time and mix well, then incorporate vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt before gradually adding to the wet ingredients.
- Fold in graham cracker crumbs, chocolate chips, and mini marshmallows.
- Spread the batter into the prepared pan and sprinkle extra chocolate chips and marshmallows on top.
- Bake for 25-30 minutes or until edges are golden and a toothpick comes out clean.
- Let cool for 10 minutes before lifting the bars out and slicing into squares.
Notes
Can be customized with different chips or nuts. Best served warm with ice cream or chocolate sauce.
