Description

Delicious pancakes inspired by churros, featuring a fluffy texture and a sweet cinnamon sugar topping.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl until well combined.
  2. Whisk together the milk, egg, melted butter, and vanilla extract in another bowl.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Flip the pancake once bubbles form on the surface and cook until both sides are golden brown.
  7. Remove from skillet and sprinkle generously with cinnamon sugar.
  8. Repeat with remaining batter, adjusting heat as needed.
  9. Serve warm and enjoy!
