Delicious and tender meatballs filled with spinach and gooey mozzarella, perfect for weeknight dinners or special gatherings.

- 1 lb Ground Beef or Turkey
- 2 cups Fresh Spinach (sautéed)
- 4 cloves Garlic (minced)
- 1 small Onion (finely chopped, optional)
- 1 large Egg
- 1 cup Breadcrumbs
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes
- 1 tbsp Italian Seasoning
- Salt and Pepper (to taste)
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Chopped Parsley
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet and sauté the spinach until wilted; allow to cool.
- Combine ground beef (or turkey), sautéed spinach, minced garlic, chopped onion, egg, breadcrumbs, Parmesan, Italian seasoning, salt, pepper, red pepper flakes, and parsley in a mixing bowl; mix gently.
- Stuff each portion of meat mixture with mozzarella and shape into balls.
- Brown the meatballs in a skillet over medium-high heat for 2-3 minutes on each side.
- Transfer the meatballs to a baking sheet and bake for 15-20 minutes until cooked through.
- Serve warm after letting them rest.
Notes
For a leaner option, substitute ground beef with turkey. Prepare meatballs a day in advance for convenience.
