Delicious and tender meatballs filled with spinach and gooey mozzarella, perfect for weeknight dinners or special gatherings.

Ingredients

Scale
  • 1 lb Ground Beef or Turkey
  • 2 cups Fresh Spinach (sautéed)
  • 4 cloves Garlic (minced)
  • 1 small Onion (finely chopped, optional)
  • 1 large Egg
  • 1 cup Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 8 oz Low-Moisture Mozzarella Cubes
  • 1 tbsp Italian Seasoning
  • Salt and Pepper (to taste)
  • 1/2 tsp Red Pepper Flakes
  • 1 tbsp Chopped Parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet and sauté the spinach until wilted; allow to cool.
  3. Combine ground beef (or turkey), sautéed spinach, minced garlic, chopped onion, egg, breadcrumbs, Parmesan, Italian seasoning, salt, pepper, red pepper flakes, and parsley in a mixing bowl; mix gently.
  4. Stuff each portion of meat mixture with mozzarella and shape into balls.
  5. Brown the meatballs in a skillet over medium-high heat for 2-3 minutes on each side.
  6. Transfer the meatballs to a baking sheet and bake for 15-20 minutes until cooked through.
  7. Serve warm after letting them rest.

Notes

For a leaner option, substitute ground beef with turkey. Prepare meatballs a day in advance for convenience.
