Description

A delightful balance of earthy mushrooms and fresh spinach layered with creamy ricotta and gooey mozzarella, this Spinach Mushroom Lasagna is a comforting family favorite.


Ingredients

  • Lasagna noodles
  • Fresh spinach
  • Cremini or button mushrooms
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Italian seasoning
  • Tomato sauce
  • Olive oil
  • Fresh garlic
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente.
  3. In a skillet, heat olive oil over medium heat and sauté minced garlic and mushrooms until browned.
  4. Stir in the spinach and season with salt, pepper, and Italian seasoning.
  5. In a bowl, mix ricotta with half of the Parmesan cheese and a pinch of salt.
  6. Spread a layer of tomato sauce on the bottom of a baking dish.
  7. Layer noodles, ricotta mixture, sautéed spinach and mushrooms, mozzarella, and sauce. Repeat layers.
  8. Cover with foil and bake for 25 minutes, then uncover and bake an additional 15 minutes.

Notes

Let the lasagna rest for 10-15 minutes before slicing to enhance flavors and ease of serving.
