- 2 tbsp lime juice, freshly squeezed
- 1 tbsp honey or maple syrup
- 1 tbsp olive oil

Instructions
- Prepare the Ingredients: Start by gently removing the skin from the pineapple and cutting it into bite-sized cubes. Next, wash your cucumber thoroughly and chop it into even dice.
- Slice the Vegetables: Thinly slice the red onion and jalapeño (if using). Dice the cilantro leaves.
- Make the Dressing: In a small bowl, whisk together the lime juice, honey or maple syrup, olive oil, salt, black pepper, and crushed red pepper flakes.
- Combine: Add the diced pineapple, cucumber, sliced onion, cilantro, and jalapeño into a large mixing bowl. Drizzle generously with your prepared dressing.
- Toss and Serve: Gently toss everything together, making sure all the ingredients get enveloped in the dressing. Serve immediately or chill before serving.
Notes
Chill cucumber before cutting for extra crunch. Use a ripe pineapple for maximum sweetness.
