Description

A refreshing salad that combines vibrant pineapple, crunchy cucumber, and zesty lime for a symphony of summer flavors.


Ingredients

  • 2 cups diced fresh pineapple
  • 1 large English cucumber, diced
  • 1/4 small red onion, sliced thin
  • 1/4 cup chopped cilantro leaves
  • 1 small jalapeño, sliced thin (optional)
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tbsp lime juice, freshly squeezed
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. Prepare the Ingredients: Start by gently removing the skin from the pineapple and cutting it into bite-sized cubes. Next, wash your cucumber thoroughly and chop it into even dice.
  2. Slice the Vegetables: Thinly slice the red onion and jalapeño (if using). Dice the cilantro leaves.
  3. Make the Dressing: In a small bowl, whisk together the lime juice, honey or maple syrup, olive oil, salt, black pepper, and crushed red pepper flakes.
  4. Combine: Add the diced pineapple, cucumber, sliced onion, cilantro, and jalapeño into a large mixing bowl. Drizzle generously with your prepared dressing.
  5. Toss and Serve: Gently toss everything together, making sure all the ingredients get enveloped in the dressing. Serve immediately or chill before serving.

Notes

Chill cucumber before cutting for extra crunch. Use a ripe pineapple for maximum sweetness.
