  • 1 pound boneless skinless chicken thighs
  • 1/2 teaspoon chili powder
  • 1 medium jalapeño pepper, thinly sliced
  • 1 cup fresh raspberries

Instructions

  1. Prep the chicken: Sprinkle the chicken thighs with salt, pepper, and chili powder, ensuring even coverage.
  2. Heat the skillet: Pour 2 tablespoons of olive oil into a large skillet over medium-high heat.
  3. Sear the chicken: Carefully place the chicken in the skillet, allowing it to sear without moving it for about 5-6 minutes.
  4. Flip and reduce heat: Flip the chicken and reduce the heat to medium. Sauté for another 5 minutes until cooked through.
  5. Prepare the glaze: In a small mixing bowl, combine raspberry preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, and red pepper flakes. Stir until well mixed.
  6. Glaze the chicken: Pour the glaze over the chicken in the skillet, allowing it to coat the thighs for 2-3 minutes.
  7. Add jalapeño and raspberries: In the last minute of cooking, add the sliced jalapeño and fresh raspberries. Gently toss until warmed.
