- 1 lb Boneless Chicken Breast
- 4 Large Flour Tortillas
- 1/2 cup Peanut Butter
- 3 tablespoons Soy Sauce
- 1 tablespoon Sesame Oil
- Fresh Lettuce Leaves
- 1 cup Purple Cabbage, shredded
- 2 Carrots, julienned
- 1/4 cup Fresh Cilantro, chopped
- 2 tablespoons Lime Juice
- 2 cloves Garlic, minced
- 1 inch Ginger, grated
- 1 tablespoon Honey
Instructions
- Whisk together peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, lime juice, minced garlic, grated ginger, and honey until smooth.
- Cut the boneless chicken breast into thin strips and marinate in a bowl with remaining soy sauce and sesame oil for about 10 minutes.
- Wash and dry the lettuce leaves, shred cabbage, and julienne carrots.
- Heat a large skillet over medium-high heat and cook the marinated chicken for 6 to 8 minutes until fully cooked.
- Warm flour tortillas in a skillet or microwave until soft.
- Spread peanut sauce on each tortilla, then layer with lettuce, cabbage, carrots, cooked chicken, and cilantro.
- Fold in the sides of the tortilla and roll tightly to create wraps.
- Cut each wrap in half diagonally and serve with extra peanut sauce on the side.
Notes
Makes great leftovers; store wrapped in parchment paper to maintain crunchiness.
