Description

Succulent chicken coated in a luscious mango glaze, combining vibrant flavors of sweetness and savory umami.


Ingredients

  • 1 cup mango juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Whisk together the mango juice, soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a mixing bowl until well blended.
  2. Season the chicken breasts generously with salt and pepper.
  3. Heat the vegetable oil in a skillet over medium heat until shimmering.
  4. Add the seasoned chicken to the skillet and cook for 5-7 minutes on each side until golden and cooked through.
  5. Pour the prepared mango sauce over the chicken and allow it to simmer gently.
  6. Mix cornstarch with a tablespoon of water to form a slurry and stir it into the sauce in the skillet to thicken it.
  7. Serve the mango-glazed chicken atop rice or noodles, drizzling the sauce generously over the top.

Notes

For make-ahead tips, prepare the mango glaze a day in advance and store it in the refrigerator. Use chicken thighs for a juicier option.
