Description

Ingredients

  • 1 bunch fresh asparagus (trimmed and cut into 2-inch pieces)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 lemon (juiced and zested)
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook your chosen pasta: Fill a large pot with water, add salt, and bring it to a rolling boil. Add the pasta and cook until al dente, then drain, reserving some pasta water.
  2. Heat your skillet: In a large skillet, warm the olive oil over medium heat and add the minced garlic. Cook for about a minute until fragrant.
  3. Sauté the asparagus: Add the asparagus to the skillet and cook for 3-4 minutes until they soften but still retain crunch.
  4. Add the lemon: Pour in the lemon juice and zest, seasoning with salt and pepper. Stir gently to coat the asparagus.
  5. Combine with pasta: Toss in the cooked pasta, mixing well. If it seems dry, add a splash of reserved pasta water.
