Description

A creamy and satisfying avocado chicken salad filled with fresh herbs and crunchy cucumbers, perfect for a healthy lunch or dinner.


Ingredients

  • 2 ripe avocados, diced
  • 1/2 cup Greek yogurt
  • 1 cup cucumber, diced
  • 1/4 cup fresh herbs (cilantro, dill, or parsley), chopped
  • Salt and pepper, to taste

Instructions

  1. In a medium bowl, combine the shredded chicken and diced avocado. Use a fork to lightly mash the avocado, so it coats the chicken without becoming a complete puree.
  2. Add the Greek yogurt to the chicken mixture and mix well, creating a creamy texture that envelops each ingredient beautifully.
  3. Stir in the diced cucumber and chopped fresh herbs, ensuring an even distribution throughout.
  4. Season with salt and pepper to taste. Taste as you go; adjust the seasoning until it’s just right for your palate.
  5. Chill the mixture in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully.
