- 1 ripe avocado
- 2 tablespoons lime juice
- Salt to taste
- Black pepper to taste
- Paprika for garnish
- Fresh cilantro for garnish (optional)
Instructions
- Hard boil your eggs: Place them in a saucepan and cover them with cold water. Bring the water to a vigorous boil over medium-high heat.
- Cover the pot, remove it from heat, and let it sit for 12 minutes for perfectly cooked yolks.
- Drain the hot water and transfer the eggs to an ice bath. Allow them to cool for several minutes.
- Peel the eggs gently under running water to ensure a clean peel, and slice them in half lengthwise.
- Remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork, then add the avocado, lime juice, salt, and black pepper. Blend everything until smooth and creamy.
- Spoon or pipe the avocado mixture back into the egg whites.
- Sprinkle paprika on top for color and a hint of warmth, and garnish with chopped cilantro if desired.
- Serve immediately, or refrigerate for a short while to chill before serving.
Notes
Make the avocado mixture up to a day in advance; wait to fill the egg whites until just before serving.
