Description

These Avocado Deviled Eggs offer a delectable blend of creamy avocado and hard-boiled egg yolks, garnished with lime juice and paprika for a refreshing twist.


Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 2 tablespoons lime juice
  • Salt to taste
  • Black pepper to taste
  • Paprika for garnish
  • Fresh cilantro for garnish (optional)

Instructions

  1. Hard boil your eggs: Place them in a saucepan and cover them with cold water. Bring the water to a vigorous boil over medium-high heat.
  2. Cover the pot, remove it from heat, and let it sit for 12 minutes for perfectly cooked yolks.
  3. Drain the hot water and transfer the eggs to an ice bath. Allow them to cool for several minutes.
  4. Peel the eggs gently under running water to ensure a clean peel, and slice them in half lengthwise.
  5. Remove the yolks and place them in a mixing bowl.
  6. Mash the yolks with a fork, then add the avocado, lime juice, salt, and black pepper. Blend everything until smooth and creamy.
  7. Spoon or pipe the avocado mixture back into the egg whites.
  8. Sprinkle paprika on top for color and a hint of warmth, and garnish with chopped cilantro if desired.
  9. Serve immediately, or refrigerate for a short while to chill before serving.

Notes

Make the avocado mixture up to a day in advance; wait to fill the egg whites until just before serving.
