Ingredients

- 1 pork loin (about 2–3 pounds)
- 4 slices of bacon, chopped
- 1 apple, peeled and diced
- 1/2 onion, diced
- 1 cup breadcrumbs
- 1/2 cup chicken broth
- 1 teaspoon sage
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the chopped bacon in a skillet over medium heat until crispy.
- Add the diced onion and apple; cook until softened, about 5-7 minutes.
- Stir in the breadcrumbs, chicken broth, sage, thyme, salt, and pepper; mix until well combined.
- Make a slit in the pork loin to create a pocket.
- Stuff the pork loin with the bacon-apple mixture.
- Drizzle with olive oil and place in a baking dish.
- Roast in the preheated oven for about 1-1.5 hours until the internal temperature reaches 145°F (63°C).
- Let rest before slicing and serving.

Make-ahead tips: You can prepare the stuffing a day ahead; just refrigerate it and stuff into the meat before roasting.
