Description

A savory and sweet stuffed pork loin that’s perfect for family dinners and special occasions.


Ingredients

Scale
  • 1 pork loin (about 23 pounds)
  • 4 slices of bacon, chopped
  • 1 apple, peeled and diced
  • 1/2 onion, diced
  • 1 cup breadcrumbs
  • 1/2 cup chicken broth
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the chopped bacon in a skillet over medium heat until crispy.
  3. Add the diced onion and apple; cook until softened, about 5-7 minutes.
  4. Stir in the breadcrumbs, chicken broth, sage, thyme, salt, and pepper; mix until well combined.
  5. Make a slit in the pork loin to create a pocket.
  6. Stuff the pork loin with the bacon-apple mixture.
  7. Drizzle with olive oil and place in a baking dish.
  8. Roast in the preheated oven for about 1-1.5 hours until the internal temperature reaches 145°F (63°C).
  9. Let rest before slicing and serving.

Notes

Make-ahead tips: You can prepare the stuffing a day ahead; just refrigerate it and stuff into the meat before roasting.
