Description

A vibrant salad with juicy marinated chicken, fresh greens, cherry tomatoes, and creamy mozzarella, drizzled with balsamic vinaigrette, perfect for any meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup balsamic vinaigrette
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Marinate the chicken breasts in balsamic vinaigrette for at least 30 minutes.
  3. Place the marinated chicken on a baking sheet.
  4. Bake for 25–30 minutes until fully cooked.
  5. Let the chicken rest before slicing it.
  6. Combine mixed salad greens, cherry tomatoes, and mozzarella in a bowl.
  7. Add the sliced chicken on top.
  8. Drizzle with olive oil and additional balsamic vinaigrette.
  9. Season with salt and pepper to taste, then serve immediately.

Notes

For enhanced flavor, marinate the chicken longer. You can use an air fryer for quick cooking.
