Description

Delicious baked zucchini fries that offer a guilt-free crunch and a flavor explosion with every bite.


Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis into sturdy sticks, about 1/4 inch thick.
  3. Prepare the breadcrumb mixture by combining breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper in a bowl.
  4. Beat the eggs in a separate bowl until frothy.
  5. Coat each zucchini stick in the egg, then roll it in the breadcrumb mixture.
  6. Arrange the coated fries on a baking sheet lined with parchment paper.
  7. Spray lightly with cooking spray or drizzle with olive oil.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown.
