Description

A delightful dish combining juicy grilled chicken breasts topped with a refreshing mix of diced cherry tomatoes, basil, and tangy balsamic vinegar, finished with melted mozzarella.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, diced
  • 1 cup fresh basil, chopped
  • 1/2 cup balsamic vinegar
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix the diced cherry tomatoes, chopped basil, olive oil, balsamic vinegar, and season with salt and pepper in a mixing bowl. Let marinate.
  3. Season the chicken breasts generously with salt and pepper.
  4. Place the seasoned chicken on the grill and cook for about 6-7 minutes per side, until the internal temperature reaches 165°F.
  5. Add the tomato-basil mixture and sprinkle mozzarella on top in the last minutes of grilling, then cover to melt cheese.
  6. Serve warm and enjoy!

Notes

Let chicken rest for 5 minutes after grilling for juiciness. Customize toppings with different cheeses or add crushed red pepper for heat.
