- 1 lb steak tips
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cups assorted vegetables (bell peppers, zucchini, carrots)
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the steak tips, balsamic vinegar, olive oil, garlic powder, Italian seasoning, salt, and pepper in a large mixing bowl.
- Spread the steak tips evenly on one side of a sheet pan.
- Toss your assorted vegetables with olive oil, salt, and pepper in the same bowl.
- Place the vegetables on the other side of the sheet pan.
- Roast for about 20-25 minutes, checking for doneness.
- Remove from the oven, let it rest for a few minutes, and serve warm.
Notes
Allow the steak tips to come to room temperature before cooking for improved tenderness. Marinating for up to 2 hours will deepen the flavors.
