Description

A heartwarming Beef Barley Soup filled with tender beef, hearty barley, and fresh garden vegetables, perfect for chilly evenings.


Ingredients

  • 1 lb beef stew meat
  • 1 cup barley
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. Sear the beef: In a large pot, heat a splash of oil over medium heat, then brown the beef stew meat until it develops a deep, rich color.
  2. Cook the vegetables: Add the chopped onion, sliced carrots, chopped celery, and minced garlic to the pot. Sauté for about 5 minutes until the vegetables begin to soften.
  3. Combine and season: Stir in the beef broth, barley, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil and simmer: Raise the heat until the mixture starts to boil, then lower to a simmer. Let it bubble gently for about 45 minutes, or until the barley is tender and the beef is cooked through.
