- 1 cup barley

- 1 bay leaf
Instructions
- Sear the beef: In a large pot, heat a splash of oil over medium heat, then brown the beef stew meat until it develops a deep, rich color.
- Cook the vegetables: Add the chopped onion, sliced carrots, chopped celery, and minced garlic to the pot. Sauté for about 5 minutes until the vegetables begin to soften.
- Combine and season: Stir in the beef broth, barley, thyme, bay leaf, salt, and pepper.
- Bring to a boil and simmer: Raise the heat until the mixture starts to boil, then lower to a simmer. Let it bubble gently for about 45 minutes, or until the barley is tender and the beef is cooked through.
- Finish and serve: Remove the bay leaf before serving up bowls of your hearty Beef Barley Soup.
