- 1 ½ cups all-purpose flour
- ½ cup sugar
- ¼ teaspoon salt
- 2 teaspoons baking powder
- ½ cup cream cheese, softened
- 1 large egg
- ½ cup milk
- ½ cup melted butter
- 1 cup mixed berries (blueberries, raspberries, strawberries)
Instructions
- Preheat the oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners.
- Whisk together the flour, sugar, salt, and baking powder in a large bowl.
- Mix the softened cream cheese, egg, milk, and melted butter until smooth in another bowl.
- Combine the wet ingredients with the dry ingredients; stir gently until just blended.
- Fold in the mixed berries carefully using a rubber spatula.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring to a cooling rack.
