Description

Delicious and fluffy muffins filled with fresh berries and creamy cheese, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup cream cheese, softened
  • 1 large egg
  • ½ cup milk
  • ½ cup melted butter
  • 1 cup mixed berries (blueberries, raspberries, strawberries)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners.
  2. Whisk together the flour, sugar, salt, and baking powder in a large bowl.
  3. Mix the softened cream cheese, egg, milk, and melted butter until smooth in another bowl.
  4. Combine the wet ingredients with the dry ingredients; stir gently until just blended.
  5. Fold in the mixed berries carefully using a rubber spatula.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-22 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a cooling rack.
