Description

A vibrant and refreshing seafood salad featuring king crab, fresh vegetables, and a creamy dressing, perfect for summer gatherings.


Ingredients

  • 1 1/2 lbs King Crab (or cocktail shrimp)
  • 6 large eggs
  • 10 cups chopped romaine lettuce (or butter lettuce)
  • 1 large avocado
  • 1 cup cherry tomatoes
  • 6 medium cocktail cucumbers
  • 10 small radishes (or 2 watermelon radishes)
  • 1 small red onion
  • 2 tbsp capers
  • 1 large lemon
  • 1 bundle asparagus spears (about 20 spears)
  • Olive oil, sea salt, and pepper (to taste)
  • 1 recipe of Homemade Louie Salad Dressing

Instructions

  1. Prepare the Dressing: Whisk together the ingredients for your homemade Louie dressing. Cover and set aside to let the flavors meld.
  2. Make Hard-Boiled Eggs: Place eggs in cold water, bring to boil, cover and let sit for 12 minutes, then transfer to ice water.
  3. Shell the Crab: Crack shells and pull out the tender meat or rinse cocktail shrimp.
  4. Prepare the Veggies: Rinse and chop the romaine, avocado, tomatoes, radishes, cucumbers, and asparagus. Blanch asparagus for 1 minute, then plunge into ice water.
  5. Assemble the Salad: In a large bowl, combine the romaine, avocado, radishes, tomatoes, cucumbers, asparagus, crab, and capers. Toss gently and drizzle the dressing.
  6. Serve: Plate the salad and garnish with extra capers or a lemon wedge.

Notes

Serve fresh with crusty bread or grilled seafood. Customize with additional toppings like feta cheese or nuts.
