Ingredients

- 1 1/2 lbs King Crab (or cocktail shrimp)
- 6 large eggs
- 10 cups chopped romaine lettuce (or butter lettuce)
- 1 large avocado
- 1 cup cherry tomatoes
- 6 medium cocktail cucumbers
- 10 small radishes (or 2 watermelon radishes)
- 1 small red onion
- 2 tbsp capers
- 1 large lemon
- 1 bundle asparagus spears (about 20 spears)
- Olive oil, sea salt, and pepper (to taste)
- 1 recipe of Homemade Louie Salad Dressing
Instructions
- Prepare the Dressing: Whisk together the ingredients for your homemade Louie dressing. Cover and set aside to let the flavors meld.
- Make Hard-Boiled Eggs: Place eggs in cold water, bring to boil, cover and let sit for 12 minutes, then transfer to ice water.
- Shell the Crab: Crack shells and pull out the tender meat or rinse cocktail shrimp.
- Prepare the Veggies: Rinse and chop the romaine, avocado, tomatoes, radishes, cucumbers, and asparagus. Blanch asparagus for 1 minute, then plunge into ice water.
- Assemble the Salad: In a large bowl, combine the romaine, avocado, radishes, tomatoes, cucumbers, asparagus, crab, and capers. Toss gently and drizzle the dressing.
- Serve: Plate the salad and garnish with extra capers or a lemon wedge.
Notes
Serve fresh with crusty bread or grilled seafood. Customize with additional toppings like feta cheese or nuts.
