Instructions
- Heat olive oil in a large pot over medium heat. Sauté the onion, garlic, carrots, and celery until softened, about 5-7 minutes.
- Stir in the shredded chicken, then pour in the chicken broth and add the thyme and rosemary. Bring to a gentle boil.
- Lower the heat and slowly stir in the heavy cream. Simmer for 10-15 minutes until flavors meld.
- Season with salt and pepper to taste.
- Serve hot, garnished with freshly chopped parsley.
