Description

Delicious and tender Birria Tacos filled with spiced beef, melted cheese, and vibrant toppings, perfect for any occasion.


Ingredients

  • 1 1/2 lbs beef roast (chuck roast or pot roast)
  • 1/4 cup avocado oil
  • 1 large onion (sliced)
  • 2 tsp sea salt
  • 2 tsp chipotle chili powder
  • 2 tsp ground cumin
  • 1 tsp ground black pepper
  • 1 tsp dried garlic
  • 1 tsp dried onion
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 4 to 5 cups water
  • 12 small tortillas (corn or wheat)
  • 2 cups grated mozzarella cheese
  • 5 oz queso fresco (crumbled)
  • Chopped cilantro, sliced red onion, lime wedges, and shredded cabbage (for garnish)
  • Oil for frying

Instructions

  1. Prepare the seasoning by combining sea salt, chipotle chili powder, ground cumin, black pepper, dried garlic, dried onion, smoked paprika, ground coriander, and dried oregano in a bowl. Rub the mixture over the beef and marinate overnight.
  2. Sear the beef in a Dutch oven with avocado oil, browning on all sides.
  3. Cook the beef until tender using your preferred method: slow cooker, Instant Pot, or stovetop.
  4. Shred the beef and strain the broth.
  5. Assemble the tacos by dipping tortillas in broth, frying them until crispy, then filling with shredded beef and cheese.
  6. Serve with warm broth, garnished with queso fresco, cilantro, lime, and cabbage.

Notes

Marinate the beef a day early for best flavor. Experiment with different cheeses or spices for variety.
