- 1 1/2 lbs beef roast (chuck roast or pot roast)
- 1/4 cup avocado oil
- 1 large onion (sliced)
- 2 tsp sea salt
- 2 tsp chipotle chili powder
- 2 tsp ground cumin
- 1 tsp ground black pepper
- 1 tsp dried garlic
- 1 tsp dried onion
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1 tsp dried oregano
- 4 to 5 cups water
- 12 small tortillas (corn or wheat)
- 2 cups grated mozzarella cheese
- 5 oz queso fresco (crumbled)
- Chopped cilantro, sliced red onion, lime wedges, and shredded cabbage (for garnish)
- Oil for frying
Instructions
- Prepare the seasoning by combining sea salt, chipotle chili powder, ground cumin, black pepper, dried garlic, dried onion, smoked paprika, ground coriander, and dried oregano in a bowl. Rub the mixture over the beef and marinate overnight.
- Sear the beef in a Dutch oven with avocado oil, browning on all sides.
- Cook the beef until tender using your preferred method: slow cooker, Instant Pot, or stovetop.
- Shred the beef and strain the broth.
- Assemble the tacos by dipping tortillas in broth, frying them until crispy, then filling with shredded beef and cheese.
- Serve with warm broth, garnished with queso fresco, cilantro, lime, and cabbage.
Notes
Marinate the beef a day early for best flavor. Experiment with different cheeses or spices for variety.
