- 1 1/2 cups crushed digestive biscuits
- 1/2 cup unsalted butter, melted
- 1 cup pistachio cream
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup fresh blackberries
- 1/4 cup sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×9 inch baking dish.
- Combine crushed digestive biscuits and melted butter in a bowl until well mixed.
- Press the mixture into the bottom of the prepared dish to form a dense crust.
- Beat the cream cheese and powdered sugar in another bowl until smooth. Stir in the pistachio cream.
- Spread this mixture evenly over the biscuit crust.
- In a small saucepan, combine blackberries, sugar, and lemon juice over medium heat. Cook until the blackberries soften.
- Strain the berry sauce if desired.
- Pour the blackberry sauce over the pistachio layer.
- Chill the bars in the refrigerator for at least 240 minutes.
- Cut into bars and serve chilled.
