Description

Ingredients

  • 1 1/2 cups crushed digestive biscuits
  • 1/2 cup unsalted butter, melted
  • 1 cup pistachio cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup fresh blackberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9 inch baking dish.
  3. Combine crushed digestive biscuits and melted butter in a bowl until well mixed.
  4. Press the mixture into the bottom of the prepared dish to form a dense crust.
  5. Beat the cream cheese and powdered sugar in another bowl until smooth. Stir in the pistachio cream.
  6. Spread this mixture evenly over the biscuit crust.
  7. In a small saucepan, combine blackberries, sugar, and lemon juice over medium heat. Cook until the blackberries soften.
  8. Strain the berry sauce if desired.
  9. Pour the blackberry sauce over the pistachio layer.
  10. Chill the bars in the refrigerator for at least 240 minutes.
  11. Cut into bars and serve chilled.
