- 1 cup rolled oats
- 1/2 cup nut butter (almond or peanut butter)
- 1/4 cup honey or maple syrup
- 1/2 banana, mashed
- 1/2 cup chocolate chips or dried fruit
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the rolled oats, nut butter, honey (or maple syrup), and mashed banana in a mixing bowl.
- Mix in the chocolate chips (or dried fruit), vanilla extract, baking powder, and salt until evenly distributed.
- Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between each.
- Flatten each cookie using the back of a spoon.
- Bake for 10-12 minutes until edges are golden brown.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Make-ahead tips: The dough can be refrigerated overnight for better flavor. For a quicker version, use an air fryer at 320°F (160°C) for 8-10 minutes.
