Description

A warm and inviting bowl of Cajun Potato Soup featuring creamy potatoes, andouille sausage, and bold Cajun spices, perfect for chilly evenings.


Ingredients

  • 8 ounces andouille sausage, diced
  • 4 large potatoes, peeled and cubed
  • 1 cup mixed vegetables (onion, celery, bell pepper)
  • 1 teaspoon Cajun spices (paprika, cayenne pepper, garlic powder, oregano)
  • 2 cups heavy cream
  • 1 cup cheddar cheese, grated
  • 4 cups chicken or vegetable broth
  • Salt and black pepper to taste

Instructions

  1. Cook the sausage in a large pot over medium heat until crispy, about 5-7 minutes.
  2. Add the diced potatoes and mixed vegetables, sauté for another 3-4 minutes.
  3. Season with Cajun spices, salt, and black pepper.
  4. Build the broth by pouring in the chicken or vegetable broth, bring to a simmer, and cook for 15-20 minutes until potatoes are tender.
  5. Stir in the heavy cream and cheddar cheese until melted and smooth.
  6. Serve the soup in bowls, garnished with extra cheese or green onions if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or non-dairy alternatives. You can also add different vegetables or proteins as desired.
