- 8 ounces andouille sausage, diced
- 4 large potatoes, peeled and cubed
- 1 cup mixed vegetables (onion, celery, bell pepper)
- 1 teaspoon Cajun spices (paprika, cayenne pepper, garlic powder, oregano)
- 2 cups heavy cream
- 1 cup cheddar cheese, grated
- 4 cups chicken or vegetable broth
- Salt and black pepper to taste
Instructions
- Cook the sausage in a large pot over medium heat until crispy, about 5-7 minutes.
- Add the diced potatoes and mixed vegetables, sauté for another 3-4 minutes.
- Season with Cajun spices, salt, and black pepper.
- Build the broth by pouring in the chicken or vegetable broth, bring to a simmer, and cook for 15-20 minutes until potatoes are tender.
- Stir in the heavy cream and cheddar cheese until melted and smooth.
- Serve the soup in bowls, garnished with extra cheese or green onions if desired.
Notes
For a lighter version, substitute heavy cream with half-and-half or non-dairy alternatives. You can also add different vegetables or proteins as desired.
