Ingredients

  • 4 fillets salmon
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1/4 cup cilantro
  • 1 clove minced garlic
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons water
  • 2 cups rice
  • 1 can black beans and corn (optional)
  • 1 cup chopped red onion
  • 1 cup diced tomatoes
  • 1 lime, cut into wedges
  • 8 corn or flour tortillas
  • 2 cups shredded lettuce

Instructions

  1. Cook the rice: Follow package instructions to prepare the rice. Fluff it up once cooked and set aside.
  2. Prepare the marinade: In a small bowl, combine Cajun seasoning, olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Mix well and coat the salmon fillets thoroughly with this enticing blend. Let them marinate for at least 10 minutes.
  3. Cook the salmon: Heat a non-stick skillet over medium-high heat. Add a little olive oil, then carefully place the salmon fillets skin-side down. Cook for about 4-5 minutes until golden brown. Flip and cook for an additional 4-5 minutes until flaky.
  4. Make the avocado cream: In a mixing bowl, mash the ripe avocados until smooth. Stir in sour cream or Greek yogurt, lime juice, minced garlic, cilantro, and cayenne pepper. Blend until creamy, adjusting consistency with water if needed.
  5. Mix the veggie medley: Combine chopped red onion, diced tomatoes, corn, and black beans. Season with salt and pepper.
  6. Assemble your dish: Place a warm tortilla on a plate and add rice. Top with salmon, veggie mixture, a dollop of avocado cream, and shredded lettuce. Squeeze fresh lime over the top.

Notes

Marinate salmon overnight for improved flavor. Adjust the amount of Cajun seasoning for desired spice level.
