Description

A refreshing salad combining shredded carrots and diced sweet apples, dressed in a creamy yogurt dressing with a hint of honey and lemon juice.


Ingredients

  • 2 cups shredded carrots
  • 2 apples, diced (preferably Fuji or Honeycrisp)
  • 1/2 cup plain yogurt
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: nuts or raisins for topping

Instructions

  1. Combine the shredded carrots and diced apples in a large mixing bowl until evenly distributed.
  2. Mix together the plain yogurt, honey, lemon juice, salt, and pepper in a small bowl until smooth.
  3. Toss the yogurt dressing over the carrot and apple mixture, gently tossing until coated.
  4. Add your choice of nuts or raisins as a topping, if desired.
  5. Serve immediately, or refrigerate for an hour to chill and meld the flavors.

Notes

This salad can be made ahead of time, but avoid adding nuts or raisins until just before serving to maintain their crunch.
