Description

Ingredients

  • 1 tbsp dry yeast (instant or regular)
  • 1 tsp sea salt
  • 1 tsp vanilla extract
  • 1/3 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup white granulated sugar
  • 4 cups all-purpose flour
  • 1/2 cup unsalted butter (very soft)
  • 1 cup brown sugar (packed)
  • 1 1/2 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg (freshly grated)
  • 2 medium carrots (grated; about 1 1/4 cups grated)
  • 1 cup finely diced pecans (or walnuts, pistachios, almonds)
  • 3/4 cup half-and-half (or cream; for baking)
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 pinch sea salt
  • 1 tsp vanilla bean paste (or vanilla extract)
  • 1/4 cup finely diced pecans (for garnish; optional)

Instructions

  1. Warm the milk until lukewarm, then sprinkle the yeast on top and let it bloom for 5-10 minutes.
  2. Add the melted butter, sugar, eggs, and vanilla extract to the yeast mixture, stirring until combined.
  3. Incorporate the flour and sea salt gradually, mixing until a soft dough forms.
  4. Roll out the dough on a floured surface into a 24×12 inch rectangle.
  5. Spread the very soft butter across the surface of the dough.
  6. Mix the brown sugar, cinnamon, nutmeg, and carrots in a bowl, then sprinkle on the dough.
  7. Scatter the chopped nuts over the filling.
  8. Roll the dough from one edge into a tight log and slice into 12 equal pieces.
  9. Place each swirl into a greased baking dish and let rise for 30-45 minutes.
  10. Preheat your oven to 350°F (175°C) and bake the rolls for 20-25 minutes.
  11. Cool for 10 minutes before glazing with cream cheese icing.
  12. Beat cream cheese until smooth, then add powdered sugar, half-and-half, and vanilla, mixing until creamy.

Notes

Preparation can be done a night before; refrigerate the dough for convenience. Customize with different nuts or spices.
