- 1 cup finely diced pecans (or walnuts, pistachios, almonds)
- 3/4 cup half-and-half (or cream; for baking)
- 8 oz cream cheese (softened)
- 1 cup powdered sugar
- 1 pinch sea salt
- 1 tsp vanilla bean paste (or vanilla extract)
- 1/4 cup finely diced pecans (for garnish; optional)
Instructions
- Warm the milk until lukewarm, then sprinkle the yeast on top and let it bloom for 5-10 minutes.
- Add the melted butter, sugar, eggs, and vanilla extract to the yeast mixture, stirring until combined.
- Incorporate the flour and sea salt gradually, mixing until a soft dough forms.
- Roll out the dough on a floured surface into a 24×12 inch rectangle.
- Spread the very soft butter across the surface of the dough.
- Mix the brown sugar, cinnamon, nutmeg, and carrots in a bowl, then sprinkle on the dough.
- Scatter the chopped nuts over the filling.
- Roll the dough from one edge into a tight log and slice into 12 equal pieces.
- Place each swirl into a greased baking dish and let rise for 30-45 minutes.
- Preheat your oven to 350°F (175°C) and bake the rolls for 20-25 minutes.
- Cool for 10 minutes before glazing with cream cheese icing.
- Beat cream cheese until smooth, then add powdered sugar, half-and-half, and vanilla, mixing until creamy.
