Description

A wholesome Chicken Harvest Bowl blending grilled chicken, wild rice, roasted sweet potatoes, and fresh kale with a tangy balsamic vinaigrette, perfect for the autumn season.


Ingredients

Scale
  • 2 cups kale, chopped
  • 1 cup wild rice
  • 2 chicken breasts
  • 2 sweet potatoes, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Cook the wild rice according to package instructions, approximately 40 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. Dice sweet potatoes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
  4. Roast sweet potatoes for 25-30 minutes until tender and caramelized.
  5. Season chicken breasts with spices and grill or pan-cook for about 7-10 minutes per side until cooked through.
  6. Assemble the bowl by layering rice, kale, sweet potatoes, and chicken.
  7. Drizzle with balsamic vinaigrette just before serving.
