Ingredients

- 2 cups kale, chopped
- 1 cup wild rice
- 2 chicken breasts
- 2 sweet potatoes, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup balsamic vinaigrette
Instructions
- Cook the wild rice according to package instructions, approximately 40 minutes.
- Preheat your oven to 400°F (200°C).
- Dice sweet potatoes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
- Roast sweet potatoes for 25-30 minutes until tender and caramelized.
- Season chicken breasts with spices and grill or pan-cook for about 7-10 minutes per side until cooked through.
- Assemble the bowl by layering rice, kale, sweet potatoes, and chicken.
- Drizzle with balsamic vinaigrette just before serving.
