Description

A delicious Chicken Pesto Sandwich featuring succulent chicken, creamy mozzarella, and vibrant pesto layered on toasted bread.


Ingredients

  • 2 chicken breasts
  • 1 cup pesto sauce
  • 4 slices fresh mozzarella cheese
  • 4 slices of bread
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lettuce and tomato (optional)

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat until hot.
  3. Carefully place the chicken breasts in the hot pan, cooking until golden brown, about 5-7 minutes per side.
  4. Remove the chicken from the heat and let it rest for a few minutes.
  5. Toast the bread in the same skillet until golden brown on both sides.
  6. Spread pesto on one side of each slice of toast.
  7. Layer on one slice the sliced chicken and fresh mozzarella, then add lettuce and tomato if using.
  8. Top with another slice of bread, pesto side down.
  9. Serve immediately for the best experience.

Notes

Marinate the chicken for a few hours or overnight for richer flavor. Customize with additional toppings like roasted peppers or avocado.
