Instructions
- Preheat your oven to 180°C (350°F).
- Prepare the crust by crushing the chocolate cookies and mixing with melted butter, then press into the bottom of a springform pan.
- Mix the cream cheese and sugar in a bowl using an electric mixer until smooth.
- Add melted dark chocolate, cocoa powder, and vanilla extract, mixing until fully combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Finish by gently folding in the heavy cream.
- Assemble the mixture over the crust in the springform pan.
- Bake for about 50-60 minutes until the center is set but slightly jiggly.
- Cool at room temperature before transferring to the refrigerator to chill for at least 4 hours or overnight.
- Decorate with chocolate shavings, cocoa powder, and whipped cream before serving.
