A rich and moist banana bread infused with espresso, cocoa powder, and chocolate chips, perfect for breakfast or a sweet treat.

- ¼ cup cocoa powder
- 1 tsp baking soda
- ½ tsp kosher salt
- ½ tsp espresso powder
- ½ cup olive oil (or melted coconut oil)
- ½ cup brown sugar

- 2 eggs (room temperature)
- 1 tsp vanilla extract
- ½ cup sour cream (or Greek yogurt)
- 1 cup ripe bananas (mashed, about 2 medium bananas)
- ½ cup dark chocolate chips + extra for topping
- ½ cup semi-sweet chocolate chips + extra for topping
- 1 tbsp all-purpose flour (for dusting chocolate chips)
- ¼ banana (2 thin slices for topping)
- 1 tsp granulated sugar (for sprinkling on top)
Instructions
- Prepare the Dry Ingredients: In a large mixing bowl, combine the flour, cocoa powder, baking soda, salt, and espresso powder. Whisk until fully blended.
- Mix the Wet Ingredients: In another bowl, whisk together the olive oil, brown sugar, granulated sugar, and eggs. Add the mashed bananas, vanilla extract, and sour cream, mixing until smooth.
- Combine the Mixtures: Gently fold the dry ingredients into the wet mixture until just combined. Fold in the chocolate chips.
- Prepare the Loaf Pan: Preheat the oven to 350°F (175°C). Grease the loaf pan and pour in half of the batter, topping with banana slices, then the remaining batter and extra chocolate chips.
- Bake to Perfection: Bake for about 50-60 minutes or until a toothpick comes out clean. Cool before transferring to a wire rack.
Notes
For best results, use overripe bananas for sweetness. Customize with different types of chocolate or nuts.
