- 4 cups shredded, sweetened coconut
- 1 cup salted, roasted pistachios, finely chopped
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1 cup sweetened condensed milk
- 3 large egg whites
- 10 oz dark chocolate melts
- 1/4 cup finely ground pistachios (optional, for garnish)
Instructions
- Preheat your oven to 325°F (160°C).
- Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the shredded coconut, finely chopped pistachios, vanilla extract, and sea salt.
- Whisk the egg whites until frothy, then fold in the sweetened condensed milk.
- Mix the egg white mixture into the coconut mixture until combined.
- Use a spoon or cookie scoop to form mounds of batter on the prepared baking sheet.
- Bake for 20-25 minutes or until edges are lightly golden.
- Remove from oven and let cool for five minutes before transferring to a wire rack.
- Melt the dark chocolate and dip cooled macaroons, then place back on parchment paper.
- Sprinkle with finely ground pistachios if desired.
Notes
Store macaroons in an airtight container for up to five days or refrigerate for up to a week. You can also freeze them for longer storage.
