Description

Deliciously chewy macaroons featuring rich dark chocolate, crunchy pistachios, and sweet coconut, perfect for any festive gathering.


Ingredients

  • 4 cups shredded, sweetened coconut
  • 1 cup salted, roasted pistachios, finely chopped
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 cup sweetened condensed milk
  • 3 large egg whites
  • 10 oz dark chocolate melts
  • 1/4 cup finely ground pistachios (optional, for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine the shredded coconut, finely chopped pistachios, vanilla extract, and sea salt.
  4. Whisk the egg whites until frothy, then fold in the sweetened condensed milk.
  5. Mix the egg white mixture into the coconut mixture until combined.
  6. Use a spoon or cookie scoop to form mounds of batter on the prepared baking sheet.
  7. Bake for 20-25 minutes or until edges are lightly golden.
  8. Remove from oven and let cool for five minutes before transferring to a wire rack.
  9. Melt the dark chocolate and dip cooled macaroons, then place back on parchment paper.
  10. Sprinkle with finely ground pistachios if desired.

Notes

Store macaroons in an airtight container for up to five days or refrigerate for up to a week. You can also freeze them for longer storage.
