Description

A decadent Chocolate Strawberry Cake combining rich chocolate flavors with fresh strawberries and a silky ganache, perfect for any celebration.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, sliced
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. Mix the dry ingredients in a large bowl: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry mixture, and mix until fully combined.
  5. Stir in the boiling water gradually.
  6. Pour the batter evenly into the prepared pans.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the ganache by heating the heavy cream and pouring it over the chopped chocolate; stir until smooth.
  10. Assemble the cake by layering the cakes with fresh strawberries and ganache.
  11. Frost the top with remaining ganache and garnish with the leftover strawberries.

Notes

Make the cake a day ahead for improved flavor. Store in the refrigerator or freeze if needed.
