A decadent Chocolate Strawberry Cake combining rich chocolate flavors with fresh strawberries and a silky ganache, perfect for any celebration.

- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries, sliced
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Mix the dry ingredients in a large bowl: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry mixture, and mix until fully combined.
- Stir in the boiling water gradually.
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the ganache by heating the heavy cream and pouring it over the chopped chocolate; stir until smooth.
- Assemble the cake by layering the cakes with fresh strawberries and ganache.
- Frost the top with remaining ganache and garnish with the leftover strawberries.
Notes
Make the cake a day ahead for improved flavor. Store in the refrigerator or freeze if needed.
