- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 cup melted dark chocolate
- 1 cup fresh strawberries, pureed
- ¼ cup granulated sugar (for strawberry swirl)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by mixing chocolate cookie crumbs, melted butter, and sugar. Press into the bottom of a springform pan and bake for 10 minutes.
- Create the cheesecake filling by beating the cream cheese until light and fluffy, then gradually adding in granulated sugar, eggs, sour cream, and melted chocolate.
- Prepare the strawberry swirl by mixing strawberry puree with sugar and lemon juice.
- Assemble the cheesecake by pouring the filling into the cooled crust and dropping dollops of strawberry puree on top. Swirl gently.
- Bake for 50 to 60 minutes until edges are set and center jiggles slightly.
- Cool the cheesecake in the oven for an hour, then refrigerate for a minimum of four hours.

Store leftovers in an airtight container in the refrigerator for up to five days or freeze individual slices for up to a month.
