Description

Delicious and wholesome muffins combining protein and whole grains with the comforting flavors of cinnamon rolls, perfect for breakfast or a snack.


Ingredients

  • 1 cup protein powder
  • 1 cup whole wheat flour
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: cream cheese for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tray with liners or grease it.
  2. Whisk together the protein powder, whole wheat flour, cinnamon, baking powder, baking soda, and salt in a large mixing bowl.
  3. Combine the applesauce, milk, honey (or maple syrup), and eggs in another bowl and beat until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently with a rubber spatula until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow them to cool in the tray for a few minutes before transferring to a wire rack to cool completely.
  8. If desired, top with cream cheese glaze once cooled.

Notes

These muffins store well in an airtight container for up to 5 days in the fridge, or can be frozen for up to 3 months. Reheat in the microwave for about 20-30 seconds.
