- 1 to 1 1/2 pounds lean ground beef
- 1 small onion, diced
- 2 to 3 cloves garlic, minced
- 1 packet taco seasoning
- Salt and black pepper to taste
- 2 flour or corn tortillas
- 1 cup refried beans
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup sliced black olives
- 1/2 cup shredded lettuce
- Sour cream (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lean ground beef in a skillet over medium heat until browned, about 5-7 minutes.
- Add the diced onion and minced garlic; cook until onions are translucent, about 3-4 minutes.
- Mix in the taco seasoning, salt, and pepper.
- Spread a layer of refried beans over one tortilla on a baking sheet.
- Spoon the beef mixture over the beans.
- Add a second tortilla on top, then sprinkle with cheese and diced tomatoes.
- Bake for 10-15 minutes until cheese is melted and bubbling.
- Remove from the oven and top with olives and lettuce; serve with sour cream.
