Description

A delicious lasagna filled with roasted sweet potatoes, creamy feta, fresh spinach, and crunchy walnuts, perfect for cozy dinners.


Ingredients

  • 9 Lasagna Noodles
  • 2 Sweet Potatoes, cubed
  • 1 cup Feta Cheese, crumbled
  • 1/2 cup Walnuts, chopped
  • 1/2 cup Cranberries, fresh
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 2 cups Spinach, fresh
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Italian Herbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions; salt the water generously.
  3. Heat olive oil in a large skillet over medium heat, add minced garlic, and sauté until fragrant.
  4. Add cubed sweet potatoes, season with salt and pepper, and cook until softened, about 10-12 minutes.
  5. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  6. Layer cooked lasagna noodles, sweet potato mixture, crumbled feta, and walnuts in a large baking dish.
  7. Repeat layers until all ingredients are used, finishing with noodles and topping with feta and walnuts.
  8. Blend fresh cranberries with sugar to create a glaze and drizzle over the top layer.
  9. Bake for 30-40 minutes, or until bubbly and golden brown.
  10. Let cool for 10 minutes before serving.

Notes

Make-ahead option: Prepare a day in advance and refrigerate. Can be adapted for air fryer or slow cooker.
