- 9 Lasagna Noodles
- 2 Sweet Potatoes, cubed
- 1 cup Feta Cheese, crumbled
- 1/2 cup Walnuts, chopped
- 1/2 cup Cranberries, fresh
- 2 tbsp Olive Oil
- 2 cloves Garlic, minced
- 2 cups Spinach, fresh
- Salt, to taste
- Pepper, to taste
- 1 tsp Italian Herbs
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions; salt the water generously.
- Heat olive oil in a large skillet over medium heat, add minced garlic, and sauté until fragrant.
- Add cubed sweet potatoes, season with salt and pepper, and cook until softened, about 10-12 minutes.
- Stir in fresh spinach and cook until wilted, about 2-3 minutes.
- Layer cooked lasagna noodles, sweet potato mixture, crumbled feta, and walnuts in a large baking dish.
- Repeat layers until all ingredients are used, finishing with noodles and topping with feta and walnuts.
- Blend fresh cranberries with sugar to create a glaze and drizzle over the top layer.
- Bake for 30-40 minutes, or until bubbly and golden brown.
- Let cool for 10 minutes before serving.

Make-ahead option: Prepare a day in advance and refrigerate. Can be adapted for air fryer or slow cooker.
