Description

A delightful creamy macaroni salad with fresh veggies and a tangy dressing, perfect for any gathering.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 cup celery, diced
  • 1/2 cup red onion, diced
  • 1 cup bell pepper, diced
  • 1/2 cup sweet pickle relish
  • Salt and pepper to taste
  • Paprika for garnish (optional)

Instructions

  1. Cook the elbow macaroni: Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook until al dente. Drain and rinse under cold water.
  2. Prepare the dressing: In a large mixing bowl, combine the mayonnaise and Dijon mustard until smooth.
  3. Combine the ingredients: Add the cooled macaroni, diced celery, red onion, bell pepper, and sweet pickle relish to the dressing.
  4. Season your salad: Gently fold all the ingredients together. Taste and season with salt and pepper as desired.
  5. Chill and let flavors develop: Cover and refrigerate for at least 1 hour to meld flavors.
  6. Add the finishing touch: If desired, sprinkle paprika over the top before serving.

Notes

For a twist, you can use Greek yogurt for half of the mayonnaise or try different pasta shapes.
