- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 cup celery, diced
- 1/2 cup red onion, diced
- 1 cup bell pepper, diced
- 1/2 cup sweet pickle relish
- Salt and pepper to taste
- Paprika for garnish (optional)
Instructions
- Cook the elbow macaroni: Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook until al dente. Drain and rinse under cold water.
- Prepare the dressing: In a large mixing bowl, combine the mayonnaise and Dijon mustard until smooth.
- Combine the ingredients: Add the cooled macaroni, diced celery, red onion, bell pepper, and sweet pickle relish to the dressing.
- Season your salad: Gently fold all the ingredients together. Taste and season with salt and pepper as desired.
- Chill and let flavors develop: Cover and refrigerate for at least 1 hour to meld flavors.
- Add the finishing touch: If desired, sprinkle paprika over the top before serving.
Notes
For a twist, you can use Greek yogurt for half of the mayonnaise or try different pasta shapes.
